This was actually Sunday morning breakfast. I worked again on Saturday, on a personal project. On Saturday evening, I was tired and grumpy from running around the whole day, and of course whiny. My husband looked at me and said "Why are you tired?" So not the thing to say to a tired, grumpy and whiny me! Then he smiled and said "You're chasing a dream, right? There's no reason to be tired." OK, well saved, husband. Sure, I was still tired, but that little comment turned everything around. It's all about mindset.
This morning, I heard on the radio that it's good to have a dream to chase after. Only then do you realise every day counts, as you wake up in the morning wanting to use every possible minute to make IT happen.
So, what are you doing to make YOUR dream come true? While you think about that, make this great breakfast for your kids. It's my baked beans pasta with egg.
This is enough for three kids.
3 cloves garlic
Organic olive oil
2 handfuls pasta
Half a cup of bottled baked beans (or canned if you can't find bottled. I got mine at Justlife)
1 tbsp amino acid
1 hard-boiled egg for each kid
Boil pasta as per packet instructions. Once pasta is cooked, drain and set aside. Chop garlic and saute in olive oil until fragrant. If your kids don't like to bite into garlic chunks, remove from oil. Otherwise, leave them in. Add pasta and baked beans to the garlic oil and fold together until mixed. Add amino acid and mix well. Remove from heat. Peel egg, halve and serve with pasta.
Tip: For perfectly boiled eggs, put egg into room temperature water and bring to boil. Once it's boiling, leave it in for 4 - 5 minutes. If the egg is fresh out of the fridge, you might have to boil it for 7 - 8 minutes.
