I haven't done a recipe post in a while. Weekends are now reserved for sleeping in. Let me get over this lazy stage and I'll get back to Saturday morning breakfast posts. Since I am being a complete bum, here's a super easy recipe: Japanese-style potato salad.
You need: 1 cucumber, 5 to 6 medium sized potatoes (organic if you can find them), 1 carrot, 1.5 cup mayonnaise, salt and pepper to taste.
Deseed and thinly slice cucumber, sprinkle with salt and massage with hands until soft and limp. Set aside. Boil potatoes and carrot (whole) in water until soft, but not too soft. You want to be able to cube and slice without them breaking into pieces. When done, drain and let cool. Cube the potatoes and carrot into half-inch cubes. Place in a decent sized bowl and mix with mayonnaise. Add salt and pepper to taste. Fold in cucumber slices. Wrap with cling wrap and chill in the fridge for an hour before serving.
