Happy cupcakes for a cheerful Monday

I have to be honest - I haven't thrown anything out in three days. (See Project Declutter.) I think days of intensive weeding and throwing needs to be interspersed with days of blissful non-throwing in order for the whole exercise to be effective. Also, the hoarder in me needs to recover from the separation of self from things.

So today I bake. And after you read about the easiest cupcakes in the world, you'll want to bake too.
Get a box of cake mix from the supermarket. You have the whole shelf to choose from - butter cake, lemon cake, chocolate cake, butter raspberry swirl cake. I used butter cake. The cake mix comes with the icing mix. All you have to do is have butter, eggs and probably milk or buttermilk on hand. The instructions will probably ask for sugar as well. I usually quarter the amount required or leave it out entirely, because commercial cake mixes tend to be on the sweet side. Prepare the batter as per the instruction on the pack. Now here's where you zap it with a little nutrition for the kids. Add three mashed bananas to the batter. (Or mango, sweet potato, applesauce, pear, fresh or frozen berries, adzuki beans, etc). Spoon the batter into a cupcake pan or cups and bake. (Usually for 30 or 45 minutes, as per instructions.) One box of cake mix yields about 12 medium sized cupcakes.

Once the cupcakes are done and cooled to room temperature, start making the icing. Pipe or spoon icing onto cupcakes and you're done.
