Saturday Morning Breakfast

Last Saturday, Angelica requested for macaroni and cheese, so here they are! I ran out of macaroni elbows, so it's really penne and cheese. Not to worry, it's just as delicious and super easy to make.
Cook pasta in boiling water as per the instructions on the packet, which is usually between 10-15 minutes. Add a kombu strip in the water together with the pasta for extra taste and nutrition. Remove from heat, drain and set aside. Discard the kombu strip. Instead of making a cheese sauce, I just used three kinds of cheeses for the gooey, cheesy consistency that kids like. Yes, I know there's probably a more sophisticated/ correct way to say gooey and cheesy. The three cheese are cottage, cheddar and mozzarella. Heat up olive oil in a pan and add a clove of garlic (minced). Fry until fragrant and add the cooked pasta. Turn the heat down. Add the three cheeses in this order: cottage, mozzarella, cheddar. Fold until combined. Garnish with dried parsley and serve.
