Saturday morning breakfast

When we were little, it was a real treat when my mother opened up a can of baked beans and fried an egg to go with it. It was what my father requested for his supper sometimes, and me and my siblings would clamour round him for a bite or two. He would grudgingly let us eat and then shoo us off to bed. We never asked mom for our own helpings, and she never offered. Now I realise it must be because she didn't want us to get into the habit of eating late at night.

On the days when we had plain porridge for our meals, out would come the baked beans and various other condiments. But nothing compared to the stolen bites of baked beans and fried egg from my father's plate.

This is an easy breakfast to put together. I also found some organic jarred baked beans, which is less sweet than the canned ones.
Scramble an egg and set aside. Toss baked beans in the pan until heated through. You can also eat it straight out of the jar if you prefer. Spoon a little egg into the cup, followed by baked beans. Repeat until egg and beans reach three quarters of the cup. Toast a piece of wholemeal bread and cut into 1-inch strips. Sprinkle excess crumbs on top of the egg and beans. You can use the toast strips as a scoop. My girls just dug in with their fingers!
