Saturday morning breakfast


Mango is such a versatile fruit. You can use it in a dessert and also a meal. It makes a hearty breakfast mixed with oatmeal, and a light lunch in a salad. This takes five minutes to prepare. Cube a whole mango, sprinkle ao-nori flakes and mix lightly. Cut pita pocket in half and toast in toaster. Line pita pocket with sliced light cheddar and scoop mango cubes in. Voila! An easy breakfast that the kids love.
