What I do with leftover pasta

This is ribbon pasta with avocado, tomato and garlic.
Prep time: 10 minutes.
Steps: Add pasta to boiling water. Once cooked, strain and set aside. Heat up olive oil and cook garlic lightly. Add in tomatoes (deseeded) and cook until the tomato is in shreds and pieces (I'm sure there's a name for this, but I don't know it!) Toss pasta in and stir once or twice. Add avocado and let cook for about 10 seconds. If avocado is very ripe, remove pasta from heat and mix in avocado. Garnish with sesame seed, wheat germ and parsley.

This was Lauren's breakfast. Something light and fast.



There were leftovers and I didn't think she'd like the same thing again for lunch. So I did a little ribbon lasagna. I scooped half the pasta out and layered pureed chicken (I usually have about a cup of pureed chicken in the fridge from one drumstick), oodles of cream cheese and slices of cheddar cheese. I layered the other half of the pasta on top and put it in the oven to bake for about 5 minutes at 160 degrees celcius, to melt all the cheeses.

Lunch for Lauren, again simple and fast.
